Medium-high protein flour, suitable for all productions requiring medium/long leavening doughs at a  controlled temperature.
Ideal in confectionery for making viennoiserie, croissanterie and breakfast leavened products. Excellent for making pizza using the indirect or direct 24-hour doughs.
