We are ready to restart with the 2020-2021 advanced training courses of the Antico Fienile Academy
In the perspective of a healthy and virtuous chain of excellence, ranging from the knowledge of raw materials, processing techniques, up to the business enterprise, the Training Academy Antico Fienile will reopen its modern classroom-laboratory as soon as possible, for a calendar of in-training appointments with the best masters of the Italian white art.
Divided into 4 thematic areas: pastry, pizzeria, bakery and fresh pasta, the courses will be limited in number and will allow a maximum of 20 participants to learn methodologies and processing techniques to achieve high quality standards, constant and guaranteed by a healthy and proper diet.
Tradition and innovation will be the key to understanding these in-training days with the masters:
Federico Visinoni – World Champion at the 2015 World Championship Pizza;
Favio Gargiulo – teacher and master baker,
Fabrizio Fiorentini – bakery chef;
With them you will enter the world of quality white art, you will learn to know and use the best raw material, you will try the doughs and methodologies best suited to each type of processing.
At the end of the course you will have a new perception of the white art that looks at the taste and aesthetics, but also at the quality of the final product and well-being on the table.
